Back when I was at the Gluten & Allergen Free Expo, I was given a box of this Chocolate Pancake & Waffle Mix and was SO excited to see that it was dairy free! I met the very kind owner, JillMotew, and let her know that I'd be happy to do a review.
Before Zemas... I honestly can't remember the last time I had pancakes. With my lactose and egg issues, I've stayed away from it. Also, propylene glycol is in a lot of baking mixes and it could be a possibility for pancakes too.
Some great things about this mix?
- Certified Gluten-Free
- Certified Vegan
- Non-GMO Project Verified
- Refined Sugar Free
- Free of Artificial Colors, Additives and Preservatives
- Teff Flour — an ancient grain high in protein and fiber
- Cocoa Powder — beneficial in antioxidants
- Superseed Trio of Chia, Hemp and Flaxmeal — rich in omega-3 fatty acids, protein, fiber and antioxidants
Not only do you get all those benefits, but you get some freakin' awesome chocolate pancakes! I loved these! And they're super easy to make.
You just mix together the wet ingredients:
Add the dry ingredients and mix again:
Fire up the griddle (I used vegan butter) and pour that chocolatey goodness:
Flip 'em and poof! Check out this delecisiously sweet stack of pancakes:
I added some vegan butter and 100% pure maple syrup as well...
And I loved every second of it.
They tasted just lie what you think cocoa pancakes would taste like, but with just the slightest bit crunch because of all the seeds (hemp, chia & flaxmeal)... however, I didn't really mind. I think they would be more kid friendly if the seeds were ground, though.
Here are the ingredients straight from their website:
TEFF FLOUR, POTATO STARCH, SORGHUM FLOUR, ORGANIC FLAX SEED MEAL, COCOA POWDER, TAPIOCA STARCH, BAKING POWDER (MONOCALCIUM PHOSPHATE, BAKING SODA, CORN STARCH(MADE FROM NON-GENETICALLY MODIFIED CORN)), ORGANIC CINNAMON, HEMP SEEDS, CONTAINS LESS THAN 2 % OF EACH OF THE FOLLOWING: XANTHAN GUM, SEA SALT (SEA SALT, MAGNESIUM CARBONATE), CHIA SEEDS.
Manufactured in a dedicated gluten-free facility free of the top 8 allergens(milk, eggs, peanuts, tree nuts, soy, wheat, fish, shellfish).
Not bad, right?
