The Not So Sunny Times, Tasty Food, and Things on the horizon

Hello and Happy Sunday!

This morning I woke up to a beautiful, sunny 70 degree day and started the day like every other day - walking the pooch:

But before I get into my updates, I'd like us all to bow our heads for a second and send good vibes to the 28 photographers who just got laid off by the Sun-Times. I worked there myself for six years and my graphic design job ended up being out-sourced overseas. I was lucky enough to be able to move to a different department (layout) and keep paying my bills. Ultimately, I ended up quitting a couple of years ago for a bunch of different reasons, but the lack of stability was the biggest one. In regard to the photographers (one of my friends included), the Sun-Times plans to only use freelance photographers from now on. People need benefits, though, you know? And you don't get that freelancing. It just sucks. I hope they're all able to quickly find good jobs that they love. My heart goes out to all of them. We all deserve to do what we truly love.

Speaking of love.... I'm in LOVE with our new grill!

Now, I know I'm not supposed to eat shellfish because it's high in nickel, but I looooooove shrimp. I only eat it as a treat every now and then.

For the shrimp, I marinated it in a olive oil / canola oil combo, equal parts smoked paprika and chili powder, and freshly ground black pepper. I drizzled the corn with olive oil, black pepper and salt before I wrapped it up. The shrimp cooked in less than 10 minutes and the corn takes 25.

Just thinking about it makes me want some more...

Speaking of food, I had a recent work event - a black tie event at Spiaggia.


I stuck with a suit because I didn't want to spend the money on a new dress. It was a dinner, though, so I had to make sure that all of my guidelines were followed. So, I emailed back and forth with the event coordinator and she said they'd be sure to come up with something great.

So, the night arrived and I got myself together to go down to the event and my (hopefully) lovely dinner. Here's a photo I snapped before I left:


Anyone else notice how I look wonky eyed? LOL.

So, we arrived at the event, I sat down to dinner and they followed everything wonderfully! To a "T"! They even had plastic silverware for me and everything. I would have taken a bunch for photos, but I had to maintain SOME sort of professionalism, you know? ;-)

This is what I had, though:


Mixed greens with lemon and extra virgin olive oil


Salmon with fingerling potatoes and shallots


Sorbet trio: coconut, banana, cherry

It was ALL incredibly tasty. Bravo, Spiaggia! And thank you for the wonderful service :-)

And now for my skin update!

I'm definitely on the up-swing, which is great. I've only got a few small areas of irritation:


I've been trying out some new healing cream and it seems to be helping! I'm going to give it a little more time before I report back about it ;-)

And ALSO, I have a SURPRISE!!! But I don't want to officially announce it on the blog.... I was going to, but I want to wait until it actually happens... I don't want to jinx it! It's supposed to happen in the next 10 days... So, stay tuned!!
