After developing my lactose intolerance, I wasn't too thrilled about having to give up pizza. Then I found Amy's Roasted Vegetable Pizza with No Cheese! I got mine at Whole Foods, but I know they carry Amy's in other grocery stores as well. Now that I'm avoiding wheat because of the nickel content, I won't be eating this pizza anymore either. I still want to share it with you though:

I love artichokes and sweet onions, which are on this pizza along with shitake mushrooms and red peppers, but hooonestly I wasn't sure how I was going to like it. I mean, no cheese??? I dunno about that...
It was SO tasty!!
Here's a close-up:
- The roasted vegetables were the PERFECT thing to have on this pizza. They were roasted JUST right and the flavor was rich
- The sweet onion sauce was ridiculous. Who knew that a sweet sauce could be SO good on pizza?
- The crust was great - not too thin and not too doughy
These are the ingredients:

Overall, I give it two thumbs up. We both really liked it, actually! I could have eaten two of them.
This is definitely a great pizza for anyone who needs to avoid lactose.
